Pizza… Of Course

If you know me at all, you know I’m obsessed with pizza… you also know I try to stay healthy and active.  Pizza and healthy don’t generally go together, until you meet the cauliflower pizza!  I know you’re skeptical – I was too.. believe me!  The first couple times I tried to make the cauliflower pizza, I was unimpressed.  I couldn’t seem to get the “dough” right and it would crumble all over instead of holding together.  After much searching and experimenting, I found a recipe that I love.  Please keep in mind that I have no dietary restrictions and pretty much eat everything in moderation.  If you have dietary restrictions or don’t eat animal products, feel free to substitute ingredients.

What you need:

  • food processor
  • strainer
  • cheese cloth or really thin clean dish towel
  • cookie sheet w/ parchment paper or pizza stone
  • 1 cauliflower head
  • 1 egg
  • 1/3 cup soft goat cheese
  • dash of dried oregano
  • dash of dried basil
  • dash of dried garlic
  • dash of dried red pepper flakes
  • dash of salt
  • pizza sauce
  • mix of cheeses
  • basil leaves

What you do:

  • preheat oven to 400 degrees
  • put your cauliflower chopped up into a food processor and run it until it looks like rice
  • in a pot, bring water to a boil, then add the cauliflower and boil for about 4 minutes
  • strain the cauliflower in a strainer and then put the cauliflower in the cheese cloth and ring it out as much as you can
  • once it’s rung out, put it in a bowl and add all the other ingredients and mix well to form the “dough”
  • transfer your “dough” to your baking surface and press it out into whatever shape you want
  • bake it for 35-40 mins at 400 degrees, then take it out and add your toppings and bake again until all the cheesy goodness is melted (about 10 mins)
